Did you know that National Pie Day is January 23rd? Yep, yesterday. Well, better late than never. I’m interrupting my normally scheduled programming (as if I have one beyond trying to give you one fun main dish every week) to post this Easy Classic Chess Pie. Honestly, I made it around Thanksgiving, or was it Christmas? But that doesn’t matter because this pie is excellent at any time of the year.
When I posted my Mom’s Zucchini Soup the other day, I showed pictures of it served with Polenta. And awhile back, when I made my Roasted Sweet Potatoes & Brussels Sprouts, I served the leftovers with Polenta, too. For some reason I thought had already posted the miracle of Instant Pot Polenta, before now.
This is an oldie but a goodie, Corn Patch Corn Casserole. I was thumbing through my recipes when I came across it and I don’t think I’ve made it for over 30 years. I thought I’d resurrect my recipe and try it again. See if my memories about how good this is are correct and all that.
I was blown away by these Corn Fritter Pancakes. They’re absolutely surprising, straddling the line between savory and sweet, and they are absolutely delish, too.
You know I posted a recipe just the other day for some very special cornbread, my Jalapeno Cheddar Cornbread. And declared (oh but I do declare a lot of things, just because this is my site, lol) that being a Northerner, I like my cornbread light & fluffy & moist. That being said, I actually grew up in Iowa and grew up on cornbread just like this Southern Skillet Cornbread.
