This year I was gifted some sweet corn, freshly picked the night before. First of all, there’s something magical about fresh sweet corn, but to think of it being picked, on a balmy summer night by the light of the moon. All of a sudden it seemed even more magical! Some of my Sweet Corn went to my Instant Pot Sweet Corn (love love love no pots of boiling water and the IP cooks corn so beautifully) and the rest, well it went into this Potato Corn Chowder Instant Pot or Not.

What actually makes this Sensational Cajun Chicken Salad Cajun? It’s the Grilled Blackened Cajun Chicken Breasts but beyond that, I’ve used the kind of old-fashioned but always good Sensational Salad Dressing (it has Romano cheese in it) that hails from Baton Rouge, Louisiana. While a salad like this isn’t the traditional way to use the dressing, that dressing does make this salad sensational!

I’ve been on a mission to post out some no effort Instant Pot recipes that I think my daughter and her fam will love, and I hope you might, too. See, my daughter was married recently, and her blended family consists of seven children ranging from toddler to teenager! It’s been pretty bitter in the Twin Cities, but we’re having a little heatwave and are up to 12 degrees. Which would be great if we didn’t get about 7 inches of snow last night and even better if the high tomorrow wasn’t expected to be -5 with a low of -25 and worse on Wednesday.
