If you’ve been a follower (and if not, I’d love if you would; signups for email, facebook, and twitter are to the right) ya gotta know by now that I am a Soup lover, and def a Chili lover (they are all on my main index for Soups Chowders & Chili.) I have all kinds of Chili on my site ranging from old school to family-friendly, green to red, and a few grown-up ones. This Spicy Black Bean Chili is in that last category.
Do you know what I think has never really gotten its due? Mexican Style Ground Beef. I think too often at home we spice up our ground beef with taco seasoning which is fine, but you don’t get that great Restaurant Style Mexican Ground Beef flavor and the taste and texture that comes with it.
So maybe this is just the week for Mexican basics done in the Instant Pot. The other day it was my Instant Pot Refried Beans, and today it’s Instant Pot Mexican Rice. Which makes me wonder, do people from Mexico call their Mexican Rice “Mexican Rice?” I’m from Iowa and I call my Ham Balls “Iowa Ham Balls” on my site (because that recipe really IS made a lot in Iowa, probably a nod to the German settlers and it has that hallmark Sweet n’ Sour flavor) but if I’m just talking to someone, I just say Ham Balls. Just saying it makes me want to snicker, btw. Here’s the recipe for Iowa Ham Balls with Sweet Sour Glaze, now that I mentioned them.
So how about it guys, do you read magazines any longer? I get so much information online that they sometimes seem obsolete. And yet I manage to subscribe to a couple of food magazines because they are just so inexpensive. And they inspire me – when I manage to get them open and actually read them! That’s how I fell in love with the idea of this Moqueca Brazilian Seafood Stew – I saw it in Food & Wine Magazine.
I don’t think anyone can deny that I can be a bit of a food snob now and then. That’s made me avoid making certain dishes in my Instant Pot. Namely, Instant Pot Spaghetti. I took the plunge after visiting my daughter. When I got home, I decided to put out a little series of super easy, family-friendly Instant Pot meals to help Jess feed her hungry hoard. I gotta say, I’m eating my words over this recipe! Or I would be if I weren’t stuffing my mouth with this Simple Instant Pot Spaghetti!
