So have you guys been getting some incredible corn this year? I have been so blessed to be able to participate in some of our local Food Fairs and last week there was a lot of corn! So expect more corn recipes coming up. In the meantime, yanno it’s so hot and I’ve been grilling a lot so it was inevitable, amirite? I had to post my Best Grilled Sweet Corn.
Do you guys brine your pork chops? If you don’t I highly recommend you give it a shot and this Favorite Pork Chop Brine is a great one to start with. With very little effort and just a little planning, you can take today’s leaner (and sometimes drier) pork chops and help nudge them towards something more succulent and juicy by brining. You’ll still need to be careful not to overcook that pork, but brining is a game-changer.
One of my favorite things to make in my Instant Pot has to be beans and bean-based dishes, and Instant Pot Refried Beans are absolutely no exception. They turn out beautifully and they’re drop-dead simple. Toss your beans in the pot with an onion, an herb or two, a little spice if you like, and go & do whatever it is you’re doing. There’s no babysitting and there are no worries about precise timing or being johnny on the spot at the end of the cooking period.

So not too long ago, I decided I had to run down to a small imported foods market in Minneapolis to get some really good Feta cheese to make Bulgarian Cheese Pots. (By the way, those Bulgarian Cheese Pots are OUTSTANDING!) Yeah, who does that? Not me on a regular basis, but Bill’s Imported Foods is in such a cool area of town, it was fun just going there. I took advantage of the trip and bought several items, including extra Feta and several kinds of Feta!
