I have kind of a thing for Ropa Vieja and if you’re here, maybe you do, too. I already have a recipe on my site for a long-simmered, Slow Cooker Classic Cuban Ropa Vieja, long a family fave, but these days, I’m all about the Instant Pot…and so I wondered if an Instant Pot Ropa Vieja would be just as good. Verdict: Yup, yup, yup! It’s fabulous.
Game Day Brisket Chili
This is the Chili you want when you want a huge pot o’ chili. When you want to serve a crowd of adults who love spice and love chili, maybe for an event. And even though this is named Game Day Brisket Chili, you don’t have to reserve this big pot of seriously spicy, meaty chili only for a Game Day (although this will shine at a Superbowl party or Tailgate event) and I actually have other barbecue type options for the meat you can sub in for the Brisket.
Instant Pot Brazilian Feijoada
I’ve had Feijoada on my mind for a long time. I made Feijoada years ago but it was one of those “Hey, it’s not you, it’s me” kind of things. It was ok, but not great. It wasn’t until I tasted a lot more Brazilian food that I “got” not just the flavor but the spirit of the dish and what a difference that has made. But guess what? This time I did it in my Instant Pot. And it was easy! So here, for your dining pleasure is Instant Pot Brazilian Feijoada!
Feta Stuffed Harissa Sliders
Hi guys, I’ve been a bit awol lately; I’ve been a little under the weather, so I hope you’re bearing with me. I’m feeling better, but it seems hard to stay on track and I’m sleeping off and on pretty much around the clock. And it’s been hard to get excited about anything. Although I gotta admit, I did get pretty excited about these Feta Stuffed Harissa Sliders. I actually want them again already.
Beef Rendang – Indonesian Curry
I’m guessing the majority of people I know haven’t ever had the pleasure of being introduced to Beef Rendang – Indonesian Curry, I’m not even sure how it is that I started making Rendang. It seems kind of unlikely that back in the day, basically pre Internet & pre Food Network, this small Midwestern family would fall head over heels with this spicy curry beef dish that’s the national dish (and national treasure) of many countries, not just Indonesia.
