Beef Barley Soup seems to have never gotten really gotten it’s due as a world-class soup. This recipe starts with a little leftover pot roast and gives real-deal scratch vibes. Deep, rich flavor from a doctored-up broth helps, but it’s a cup or two of leftover pot roast and a touch of gravy or drippings that gives it a lusciousness that you’ll never get from the back of the box recipe.
Pot Roast done perfectly tender, a rich, silky gravy. Is there anything better? Here’s one that’s full of flavor, a play on the Flemish Stew with beer, Beouf Carbonnade. If that sounds too fancy, just call your Pot Roast Carbonnade – Beer Braised Pot Roast. Does a roast with any other name still smell as good? Oh, that’s Rose? Silly me…
My Mom (rest her soul) was a fantastic cook. Sure, she got sidetracked into the weirdness in the ’60s, Porcupine Balls, Tuna Casserole, and even Shake and Bake, but later found her “groove.” These German Beef Rouladen, Mushroom Gravy were a family favorite and a labor of love. I’ve always been nuts about French Onion Soup. From my very first taste! I remember it was at a little underground restaurant in Denver that I was introduced to it. I suppose these days we would call it a Bistro, and I was in my very early 20’s. I’ve had many French Onion Soups over the decades, but none of them, at any restaurant, have been as good as this French Onion Soup Cooks Illustrated Version.
