Yanno when I accidentally came across the video below I knew I had to make some Mega Dope Chos. I apologize to you before you ever push play, this is so bad on so many levels. But it made me laugh, and made me make nachos. And what better time for a killer (or mega dope) Nacho recipe than for the Superbowl? So here’s my Barbecue Pulled Pork Nachos.
Grape Jelly Barbecue Sauce, Updated
If you grew up in the Midwest like I did, or maybe just in the States, it stands to reason you might be familiar with Grape Jelly Barbecue Sauce. It’s the base sauce for all those classic barbecue type meatballs that are served out of slow cookers at so many parties, potlucks, and get-togethers. They’re just about ubiquitous, and like many simple recipes are either loved or reviled.
Instant Pot Barbecued Drumsticks
I have a true confession. And don’t get too excited to hear some juicy tidbit. It’s just that I’ve never been a huge fan of chicken legs and/or drumsticks. It was these Instant Pot Barbecued Drumsticks that converted me. Done in the Instant Pot, this budget cut of chicken becomes absolutely luscious, beautifully rendered and moist. A short stint under the broiler with your favorite barbecue sauce crisps the skin and gives Instant Pot Barbecue Drumsticks lovely caramelization. If you’re not feeling the broiler, you can’t go wrong with tossing these on the grill to finish.
New York Chicken Spiedies
Raise your hand if you want a Spiedie, maybe my New York Chicken Spiedies. If these are new to you, Spiedies are chunks of highly marinated meat, in this case, chicken, skewered and grilled. They are served on a fresh, soft roll; it has to be soft, nothing too fancy. Then they’re drizzled with the same garlicky herby vinaigrette it was marinated in. It’s a double dose of flavor and melds that gorgeous, juicy chicken and bun into one cohesive sandwich.

There’s no doubt summer is here, even in Minnesota, where for the most part it’s been cool. And there’s no doubt Father’s day is just around the corner, too, this Sunday! Father’s Day always makes me think about being outside, maybe barbecuing, and barbecuing makes me think about ribs.
