I was at the store the other day grabbing some vinegar when I happened to notice a small bottle of Balsamic Reduction for sale, right next to the Balsamic Vinegar I was buying to make a reduction. But lemme tell ya, it was pricey! The bottle was darling, though, with a cute little cork, but even that couldn’t justify paying that much for a Simple Balsamic Reduction.
As summer morphs into fall, it’s fun to make recipes that still take advantage of the abundance of tomatoes out there (yes, it’s me again – the tomato lady, lol!) but to give them a heartier twist. And when that twist includes easy boneless-chicken breast and a simple balsamic vinegar reduction? When that twist is Balsamic Glazed Chicken Tomatoes? Well, count me in.
Quick, easy, and fresh, this Grilled Caprese Chicken with Balsamic Glaze is always a huge hit at my house – best of all, there’s really nothing to it. It’s the perfect thing to throw together on a weeknight for family and it’s impressive enough to throw together for friends or company.
I love to bake, especially for special occasions – I’ll pull out my magazines, watch the shows, leaf through cookbooks for weeks before a Holiday, anticipating making glorious desserts. But for everyday – well, I’m still trying to lose those same pounds, and I like to keep things simple AND frugal. Still, though, sometimes you just want a little sumpin, sumpin.
