It’s been a while since I’ve willingly eaten any hot dog other than at a ballpark. (I miss the St. Paul Saints now that I’m in Atlanta!) Due to the generosity of others, we’ve found ourselves with an abundance of hot dogs. Most of the kids like them as is, of course, but as an adult, I needed a little incentive. I decided to revive a childhood fave: Bacon Wrapped Cheese Stuffed Hot Dogs.

Simon Pearce Vermont Cheddar Soup
I’ve become a pretty big fan of Simon Pearce’s Restaurant and an even bigger fan of the Simon Pearce Vermont Cheddar Soup. And the weird thing is, I’ve never been to the Mill at Simon Pearce, the restaurant in Quechee, Vermont. And never had their Simon Pearce Vermont Cheddar Soup there, either. But no matter, I can have it right here in Minnesota (you betcha) where it seems just as at home on a snowy March night.

Copycat Panera Steak & White Cheddar Panini
In an unexpected twist, I fell in love with the Steak & White Cheddar Panini at Panera Bread. See, I have another “go-to” sandwich but when I was out with a friend, I followed her lead. Yeah, I’m a rule breaker these days! A rebel! It was so good, I’m glad I got out of my “rut” and I recreated it here, for you. So here’s my Copycat Panera Steak & White Cheddar Panini.

Broccoli, Ham & Cheese Quiche
I do love me some quiche, how about you? It’s been a long time since I’ve made Quiche. I’ve been all about the Frittatas lately. I think I had just forgotten how good Quiche can be, and then we made this Broccoli, Ham & Cheese Quiche. I gotta say it really hit the spot.

Guinness Onion Soup with White Cheddar Croutons
I love love love me some French Onion Soup! It’s just a beautiful thing and I fell in love with it at my first bite, decades ago! For St. Patrick’s day, though, I wanted to change things up. I’ve been dying to try out one of the Guinness & Onion Soup recipes I’ve seen floating around. Here’s my version, Guinness Onion Soup with White Cheddar Croutons.
