Almost Bon Appetit's Dry Rubbed Turkey

Almost Bon Appetit’s Dry Rubbed Turkey

I know I probably should have had this post out weeks before Thanksgiving, but better late than never, right? Anyway, I figure a lot of you must have Turkey for Christmas, too, or you can pin it for next year. And what a turkey this Almost Bon Appetit’s Dry Rubbed Turkey is! The “Almost” is because I’ve changed it up, just a bit. Find the original recipe here on Bon Appetit’s site; they have several dry-brined turkey recipes.

Paneras Turkey Artichoke Panini

Panera’s Turkey Artichoke Panini

Does anybody remember way back when I posted a copycat recipe for Panera’s Steak & White Cheddar Panini? I mentioned I already had a “go-to” sandwich, but I followed my friend’s lead and ordered the steak one. My “go-to” was Panera’s Turkey Artichoke Panini. When I was out with my friend I didn’t realize it was no longer on the menu, which is a good thing because I swear I had to grieve alone when I found out.

Chicken Cordon Bleu Sliders

Chicken Cordon Bleu Sliders

Goodness knows I’m not a huge sports fan. I just don’t have the attention span to sit and follow most things on TV. Unless maybe it’s food related, lol! But yanno what I can get behind on game day? The food! There’s just something about the fun party food that shows up around every football party, and these Chicken Cordon Bleu Sliders are the perfect example of fun food.

Classic Wild Rice Soup in the Instant Pot

Classic Wild Rice Soup in the Instant Pot

So hey, here I am a Minnesota blogger and I have no Wild Rice Soup on my blog. Uff da. Well, I do have a Wild Rice and Smoked Turkey Chowder (amazingly good and healthy!) but it’s just not the same as a Classic Wild Rice Soup in the Instant Pot, now is it? (As a quick aside, I will be posting recipes that aren’t Instant Pot and aren’t soup, it’s just been a crazy Holiday week, so if you don’t have an “IP” please bear with me!)

Turkey Ramen from leftover turkey

Turkey Ramen

When the idea of making a Ramen with my Homemade Turkey Stock and a little leftover Thanksgiving Turkey entered my mind, I just couldn’t let it go. I mean seriously I was just under the grip of this cray cray idea. So of course, I started with google and I found the idea of Turkey Ramen is not without precedence. Is there nothing “new” in the world of cooking?

Light Hot Brown Sandwiches, with Buffet Style Oven Baked Bacon

Light Hot Browns

I truly do think the leftovers are the best part of any Holiday dinner, and here’s one of my favorite ways to use them. While traditionally made with turkey, Hot Browns are great made with either turkey or ham. As a matter of fact, when I make Hot Browns, I can usually count on an extra teenager or two hanging around until dinner is served. That’s ok with me – I’d rather have them at my house!

Hot Broiled Sandwiches

I love using leftover ham or turkey for sandwiches, but not just any old sandwich!  Here’s our favorite, and these sandwiches may very well be better than the ham itself. Hot, bubbly and delicious on crunchy, toasted bread with all our favorite things inside…

Filled Won Ton Cups turkey pork beef

Filled Wonton Cups

I started making these little Filled Wonton Cups as I call them many years ago. I and still make them because they’re fast, easy, make a bunch and most of all, they are strangely addictive. I promise you if you put these out on game day or bring them to a potluck, you’ll come off as an absolute genius. Seriously. People just can’t stop eating them.

Best Turkey Broth or Chicken Broth

Best Turkey Broth or Chicken Broth

I love, love, love to make my own homemade Chicken or Turkey Broth. For years, I made my own then I went through a period of time when I just stopped. A visit to my daughter’s house reminded me what a difference a homemade stock makes, not only in soups but in so many recipes. And while I don’t mind cheating with a boxed or canned or Better Than Bullion now and then, there are some recipes I wouldn’t even think about making without my Best Turkey Broth or Chicken Broth. It’s the stock make every time we have turkey, and it’s the same recipe I use for my Chicken Stock, too.

Chicken or Turkey Enchiladas with Ranchero Sauce

Ya gotta know I love me some me some Mexican, Southwestern or Tex Mex food (see my collection of Recipes for Cinco de Mayo or Anytime), and these old school Chicken or Turkey Enchiladas are one of our longtime family faves. I’ve been making them since I was just a kid – and that’s been over 40 years now (dang, I’m getting old!) and they’re just as good today as they were then. I guess you could say they’re a classic!

Turkey Tetrazzini

Turkey Tetrazzini, a creamy casserole of turkey, mushrooms, sherry and pasta is like a little black dress; it never really goes out of style. Developed by a chef for a favorite Opera singer, the name Tetrazzini, is exotic, but the flavors are familiar and it is always a crowd pleaser.
