A while back, I made some lovely Meringue Nests and had some leftover meringues. I stashed them in an airtight container on top of the fridge. Now, in my defense, I can’t see up there, and forgot about them…long story short, when I finally came across those few lonely meringue nests, weeks later, they were still fine. Chicken Fruit Salad with Raspberry Dressing
Chicken & Fruit Salad with Raspberry Dressing is one of my fave salads. The whole combo of fruit with salad greens smacks of the 90s and I think I’ve been making this version since around then, originally culled from Cooking Light. On a hot day, there’s nothing better and there’s a little something to please almost anyone!

I call it Lemon Poppyseed Fruit Salad – The Easiest Fruit Salad You’ll Never Need a Recipe For. The ingredients are so few you can whip it out by memory!

And buying flavored water can get pricey, too – plus there IS that additive thing and the resulting container disposal. The answer? My Spa Water on a Budget.
Fresh Strawberry Sorbet
Sorbet is one of the treats of summer – in Minnesota, we can’t find fresh berries that taste of anything at any other time of the year and the cost is prohibitive. Starved as we are for their sweet, floral flavor in our cold, winter wasteland, we’d probably pay anything for fresh berries – if only they were good.
