Spring always makes me think of Rhubarb first and Strawberry second. And Artichokes, but that’s another story! And I love me some Rhubarb Sauce, sweet or savory, but I love me some Strawberry Rhubarb Compote even more. And in case you’re wondering, because not everyone knows, “compote” just means fruit cooked or preserved in a sugary syrup, and it just, well, sounds “fancier” than Strawberry Rhubarb Sauce.

I think this is my new favorite fruit salad, Honey Ginger Lime Fruit Salad. It’s light, refreshing and has just enough sumpin’ sumpin’ to complement the fruit and enhance the flavor. It really does bring out the best in just about any fruit used.

Ok, so the other day for some reason, I decided I HAD to have a popover. It seemed something I could whip up without too much hassle, especially since I usually make my Popovers in a Muffin Tin. I love making those popovers; they’re just stupid simple and so delish. Well, ya’ll know how that goes. I decided I needed something special to go with my Popovers, so I decided I better make Easy Strawberry Butter. And of course, I kept thinking that both Popovers and Easy Strawberry Butter would be great for New Year’s brunch. I cannot believe how fast the days are whizzing by…it’s just days now before I have to remember to put 2019 on everything. That gets harder, every year!

I kept hoping September would be hot and I’d get to do a little more swimming in the lake, especially since I got some wild water shoes (below.) I waited and waited for them and now it’s September cool. There’s no denying fall is in the air, and right on time this year and I’m already thinking about pears and apples. In the meantime, though, I’m pulling out one last summer hurrah. I’m breaking out with this Strawberry Dream Cake.

Our Strawberry season is just ending up Nord, here, in Minnesota. So before it’s too late, I’ve been taking advantage and using strawberries, and making a lot of recipes! One is this Fresh Strawberry Compote. It’s just a simple, little sauce but it’s infused with big fresh strawberry flavor.
