I gotta tell ya about this recipe, an old family favorite, the Beef Guinness Stew from Simon Pearce. I pulled this recipe ages ago from either Bon Appetit or Gourmet; I think it might have been a write-in request and it’s been a St. Paddy’s Day celebration dinner and family fave off and on ever since.
It’s no secret to anyone who knows me that I love Bailey’s Irish Cream. Well actually, make that any Irish Cream because I sometimes buy the less expensive versions. For years, though (make that decades) I’ve been making my own Homemade Baileys Irish Cream.
I’m already thinking about St. Paddy’s Day, are you? I bet if you love corned beef as much as I do, you might be! I haven’t decided yet what to make for this year; maybe another cocktail or two? Bailey’s Irish Cream. I remember my first taste. I was barely legal but didn’t have my license with me, and my Dad, my StepMom Pat, and their friends vouched for me.
