Ok, it’s February, now. I don’t know what it’s like where you live, but it’s cold, here, and we have feet of snow. Yeah, feet. And it’s just the time of year when it gets old. So I wanted a little pick me up. Something with a little tropical flair? Maybe something with pineapple!
My folks love their nearby “Mongolian” Barbecue place, HuHot. They’re wild about it and so am I…but the cost makes me crazy, especially for what we get – which is delicious, no doubt, but is basically (for them) a big bowl of noodles with about an ounce of meat and for me mostly veggies. This Honey Sesame Chicken in the Instant Pot has saved me over and over in the last few months. When the hunger-crazed octogenarians (my folks) begin circling around 5:00 p.m. like sharks and the day’s been too hectic for anything else, I think Honey Sesame Chicken.
Since I’ve been helping out the folks, I’ve been “forced” to step up and find creative ways to use up extra steak. This time, it’s Steak Lo Mein and it HAS to be my best “secondary” steak dish, ever. Hands down.
I love love love fall. It’s my favorite season. I love the cool crisp air, and the fall colors and the golden fields and bare branches contrasting against the cool skies. And I love fall flavors and food that has – well – taste but is still comforting. Like this Roasted Red Pepper Hummus.
Good news! I was just outside and there was a cool wind! By cooler, I mean cool (85 degrees F) compared to what we’ve had. I think that nasty old heat dome is passing by! I wanted to throw up my arms and dance. And maybe I did, just a little. 🙂 I was like Rose in The Titanic. Well, older, chunkier and without Leanardo DiCaprio…or the ship. Ok, so I was just an old lady smiling into the breeze. 🙂
I don’t know if I’ve told you that I’m a reformed food snob. For years, I’d only eat the best of this and that…as prices skyrocketed, my budget diminished. I found myself cutting out a lot of the expensive fish, and was missing out on a marvelous brain food. Guess what – I’m no longer a food snob and I’m eating better than ever…
