Every once in awhile I come across a recipe that defies every known law of cooking! That’s this one. Sheet Tray Sausages with Onions & Grapes. It has a handful of ingredients, one admittedly a little strange, that you might have at home. It’s no effort, drop-dead simple and ready in about 35 minutes. And it’s so absolutely delish you’re gonna be flabbergasted by how good it is. Sound like a small miracle? Yep. And we all need small miracles every now and then.
Bistro Steak Subs
I was taken aback when someone in my life said to me, “A sandwich isn’t dinner.” To clarify, she meant dinner as in the evening meal. So never have I given that any thought about that before, I had to stop and wrap my mind around it. I’ve made sandwiches for dinner a kazillion times. And right then and there I decided I wasn’t going to guilt myself at this late stage of my life. Especially when the sandwiches are these Bistro Steak Subs.
Copycat Costco Chicken Salad – Instant Pot or Not
I make lots of Chicken salads in the summer, usually loaded up with something fun or special…but every now and then I get a craving for a good old fashioned chicken salad. A few years back I was introduced to Costco’s Chicken Salad by my sister in law. My gosh, did it ever hit the spot and it’s crazy good. But I couldn’t help but think it would be so easy to make a Copycat Costco Chicken Salad at home.
New York Chicken Spiedies
Raise your hand if you want a Spiedie, maybe my New York Chicken Spiedies. If these are new to you, Spiedies are chunks of highly marinated meat, in this case, chicken, skewered and grilled. They are served on a fresh, soft roll; it has to be soft, nothing too fancy. Then they’re drizzled with the same garlicky herby vinaigrette it was marinated in. It’s a double dose of flavor and melds that gorgeous, juicy chicken and bun into one cohesive sandwich.
Shortcut Philly Roast Pork Sandwiches
I can’t think when I first got interested in the Philly Roast Pork Sandwiches. I’m pretty sure it was after I made Minnesota Bean Pot Cassoulet Recipe. I used a little of the pork from that recipe for this loosely based interpretation of the famous sandwich, so if you’re from Philly, just look away, now! Since I just put out a post the other day on Braised Pork Roast with Sausage & Cabbage, I thought that Shortcut Philly Roast Pork Sandwiches would be a nice companion recipe. Just in case there’s any roast pork leftover from that meal.
