I’m always looking for fun, protein-packed salads to make ahead and stash in the fridge. Although it’s not “formal” meal prep, this Caesar Chicken Salad is a great way to get ahead on a couple of lunches or light dinners for the week ahead.
Herby Lemon Vinaigrette
This recipe isn’t exactly “new” to my site, but this fabulous Herby Lemon Vinaigrette really needed its own place to live on its own page. In the past, it’s been part of my Cold Tuna Salad with Green Beans, but this dressing is so versatile, you might want to try it on different salads, maybe use it as a marinade, and maybe even drizzle it over any simply cooked or grilled fish or chicken.
Easy Basil Pesto Dressing
Easy Basil Pesto Vinaigrette has got to be the easiest salad dressing ever! As long as you have a little Pesto, that is! It’s such a quick cheat and will be fabulous on all kinds of greens and/or pasta salads. I used it the other day in my Shaved Brussels Sprouts Salad with Apples & Feta and it was a beautiful marriage.
