Easy Basil Pesto Vinaigrette has got to be the easiest salad dressing ever! As long as you have a little Pesto, that is! It’s such a quick cheat and will be fabulous on all kinds of greens and/or pasta salads. I used it the other day in my Shaved Brussels Sprouts Salad with Apples & Feta and it was a beautiful marriage.
Radish Top Pesto
If you’re throwing out your radish tops, stop. Mix them into a Radish Top Pesto, which is just a Green sauce with a good nod to traditional Pesto. If you have a little spinach or kale, or other random greens, do the same! This is a great recipe for carrot or beet tops, too.

If there was ever a super simple recipe that seemed to cause so much angst it had to have been Pesto! I actually credit all the weirder recipes out there for things like Radish Top Pesto (and yeah, I have a recipe on my site, and one for Fresh Pea Pesto, too, and that’s pretty amazing, and I don’t even like peas) for getting cooks to loosen up a bit!! These days pesto is being made out of just about anything and everything, and I’m for all it! Greens & Nuts are always good for you. But the recipe here, for Pesto to Use or Freeze is the absolute classic Pesto.
