When I made Aunt Mary’s Angel Food Cake, I had a definite inspiration, and it was all about a photo. It made me think about images and how easily they can be seared into our consciousness in a heartbeat, so intensely that it seems they can never be forgotten. Riots, shootings, protests. Senseless death. It can all be a bit much. Overwhelming. Positive images can do the same thing, and I think we need more of them. (And maybe more cake, too!)
There are several Buttercream Frostings, and one that has increased in popularity recently is not very well-known is Ermine Buttercream. I was recently reading several posts about the different types of buttercream and Ermine wasn’t even on any of the lists! Ermine Buttercream Frosting is sometimes called a flour-based buttercream and sometimes called Boiled Flour Frosting or Pudding Based Frosting.
I dutifully save my butter wrappers in the freezer for when I want to quickly grease a pan for a cake, but sometimes you just need more. You need to grease and flour. Heck, for some cakes you’ll grease, add parchment, then grease and flour!
