Salmon Burgers
If you live in the Midwest, you’re probably familiar with Hy-Vee chain of grocery stores. They have an absolutely marvelous meat counter with all kinds of grab & cook options. My folks love their burgers along with quite a few of the options there. Me? I’m all about the Salmon Burgers. The only problem for cheap lil’ ol’ me? The price. And it’s not that the prices are outlandish, it’s just that they are a lot more than homemade options.
Shrimp and Grits with a Cajun Gastrique
Even if you’ve had Shrimp & Grits before, you’ve probably never had any like these. Deeply spiced, earthy shrimp, garlic, and peppers with bacon. The dish is fantastic on its own – but this has a twist – it’s drizzled with a Cajun Gastrique.
Aunt Lou’s Hot Crab Dip
When the subject of crab dip came up at our house (still helping with the folks for a while), my step-mom, yes, the one who makes the Wayside Inn Carrot Cake, oh, that carrot cake, pulled out her recipes, leafed through the binder, and pointed out this hot, little number. It was her Aunt Lou’s Hot Crab Dip.
Healthier Tuna Salad or Tuna Melts
I love a good tuna melt, and sometimes I make them super simple, but honestly? That can get a little boring. And while I’m making no claims that a cheesy, melty sandwich like this is healthy, I think it has a little edge. So I’ll just call this Healthier Tuna Salad or Tuna Melts.
