Grandma’s Old-Fashioned Date Pinwheels Icebox Cookies came down to me from my Grandma, Irene, my Mom’s Mom. Of all the cookies we had at Christmas, these were hands down my favorite. Now admittedly way back then (I was born in the ’50s,) cookies just weren’t what they are today, but these stand the test of time.
Unfortunately, many are full of heavily processed ingredients. A black mark in my book. That they’re expensive is a double damn. That so many present as healthy when they’re way over the top in calories? Well, that’s a triple damn! Why not just have a piece of cake and be done with it!!
Until late in my life, I didn’t really eat greens, and when I’d had them they’d always been Collard greens cooked forever with ham hocks or salt pork – delicious, but something I’ve avoided because of the higher fat and long cooking process.
