Oh, but I do love me some soup. Especially in the fall. And since I had some sausage left after making Smoked Sausage and White Bean Soup in the Instant Pot the other day, I thought I’d make more soup, but take it in a whole ‘nother direction. I could hardly think of a better use for that sausage than Cheesy Potato Sausage Soup – Instant Pot or Stove-top.
Jalapeno Cheddar Cornbread
So, how do you all like your cornbread? Me, I’m a Northerner, through and through. I like mine light and fluffy and moist, and in this instance, with a bit of a bite from jalapeno and cheddar in the cornbread and forming just a bit of a crust on top.
Easy Taco Skillet Dinner
If you follow me (and if you don’t, I’d love it if you did, signups are to the right) you might remember I made an easy one pan Porcupine Skillet Dinner a few weeks ago. It was surprisingly good. Really, we kind of went nuts over it, and that inspired me to see if I could do the same thing with a Mexican-style meal. And so my Easy Taco Skillet Dinner was born.

Enchiladas con Carne
Those of you who know me know I’m kind of a sucker for Mexican food. Or Southwestern. Or Tex-Mex. When I saw these old-school Tex-Mex-type enchiladas pop up in an email from the New York Times, I was all over it. These are Enchiladas con Carne from El Real Tex-Mex in Houston.
