When I decided to make my Lighter Mongolian Beef, I wanted to look a little into the history of Mongolian Beef. I knew it wasn’t an authentic “Mongolian” dish, but it seems Mongolian Beef was created in Taiwan, so that’s a twist!
Leftover Steak & Mushroom Pies
When you do it right, leftovers can be better than the original meal, and these Leftover Steak & Mushroom Pies are a perfect example! They were made with a bit of my Poor Man’s Mock Prime Rib I made the other day. And since I started with most of my ingredients already cooked, I whipped up these Leftover Steak & Mushroom Pies in no time at all.
Poor Man’s Mock Prime Rib
It’s been a long time since I’ve made a roast. I mean a real roast, in the oven. I did do a 30 Minute Instant Pot Roast, which was fun, but that was way back in January. So when I saw roast on sale this last week I decided it was about time to try another. Now Prime Rib isn’t in my budget, and truthfully, neither is a Standing Rib Roast but here’s my go-to method to take a cheap, grocery store roast and make it taste better, kind of a Poor Man’s Mock Prime Rib. This is a super easy recipe, but it’s a bit different and I’ve taken you through each step; don’t be worried about the length of the post!
Vietnamese Beef & Potatoes Bo Xao Khoai Tay
Stir-Fried Beef & Potatoes (Bo Xao Khoai Tay) is a dish often cooked in the home, and not always on the menu at most Vietnamese restaurants. If it’s on the menu, don’t sit on it! It’s so much more than it seems!
Juicy Lucyfer Sliders
I really have been in fun food mode, especially with Halloween coming up and fall here. See, in the summer, most of us Minnesotans are out doing whatever we can to take advantage of the weather, but when fall comes, we like to tuck in and party at home. Or at least I do! And especially if I have Juicy Lucyfer Sliders.
