This recipe isn’t exactly “new” to my site, but this fabulous Herby Lemon Vinaigrette really needed its own place to live on its own page. In the past, it’s been part of my Cold Tuna Salad with Green Beans, but this dressing is so versatile, you might want to try it on different salads, maybe use it as a marinade, and maybe even drizzle it over any simply cooked or grilled fish or chicken.

Ratatouille has become a favorite at home, surprisingly much liked by my meat-loving, nearly adult son! The flavors of this Provencal vegetable stew are outstanding; it tastes like summer, fresh and vibrant. That’s one reason he loves it!

Until late in my life, I didn’t really eat greens, and when I’d had them they’d always been Collard greens cooked forever with ham hocks or salt pork – delicious, but something I’ve avoided because of the higher fat and long cooking process. If I had only known then, what I know now: that Braised Greens are quick, delish & healthy, I’d have been eating them a lot more.
