I’m trying to keep a little balance with the food I make, so I thought I’d give these Healthier Cinnamon Sugar Pumpkin Muffins a shot. I always have the idea that if I’m gonna to eat something, I’m gonna eat the best, crazy, good and over the top of whatever it is, and just eat less of it. Well, that really doesn’t really seem to be working out for me that well.
I have a new favorite “Salsa”, Roasted Sweet Corn Salsa. This salsa is like everything good in the world all combined into one beautiful, corny, creamy, cheesy, spicy dip.
I love this Strawberry Cream Oatmeal Smoothie! It’s super simple, full of healthy, natural ingredients and is ready in a shake! And you don’t need any frozen ingredients! Bonus. At least if you’re like me and forget to freeze fruit for smoothies!
Caramelized Onions are my JAM! Well, not literally, but there’s an idea, for a recipe, huh? But today, I used them in a healthier Skinny Caramelized Onion Dip. Perfect to take to a party or serve at home.
Well, some of you may have noticed I’ve been a little awol over the past few weeks. After my fave octogenarians, the folks, moved into a gorgeous assisted living center, their house was settled and I came back to the Twin Cities – along with Homer & Chance, of course.

I have a confession – I’ve never warmed up to Ranch dressing. Everyone I know loves it…but not me. Sometimes I think I’m a lone hold out. Until now.
Rhubarb Pistachio Cake. came about because there’s a “perfect storm” of ingredients! A neighbor volunteered some rhubarb, I had just picked up a new carton of yogurt and I knew I had a stash of pistachios in the freezer. Then I happened to open up the April Martha Stewart magazine.
You know what I love? Smoothies. And probably you do, too? But what I don’t love? Putzing with them. Adding a bit of this or that, trying to get them thick and luscious but still sippable through a straw.
I first became aware of Watermelon Yogurt Salad from the commercials of one of those Greek Yogurts. The idea didn’t really appeal to me much. That was until at my folk’s house, my StepSister stepped in and mixed a quick one up from a bit of watermelon we had languishing in the fridge.
For once I don’t have too much to say about a recipe – only that I became utterly enamoured with the idea of this when I was leafing through a Midwest Magazine. I was wowed! Perfect for fall, perfect for Thanksgiving and perfect for me! The recipe makes eight servings, but for these photos, I made a smaller version.
Did you know the Bundt cake pan was developed in Minnesota? It’s true. You betcha. And guess what? This Chocolate Banana Bundt Cake was, too. By moi! It has a surprise inside: a Rum spiked Cream Cheese, Chocolate Chip Tunnel. And to take it to the next level, it has two glazes, and not your ordinary plain old tired glazes. Nope, nope, nope! This one has a Chocolate Ganache Glaze topped off by Rum Vanilla Glaze. Uff-dah!
I try to eat healthy, fresh vegetables all year ’round, paying attention of course to pricing and seasonality when I can. This year, though, when summer finally hit I felt like I emerged from the house into the sunlight like one of the old-time pioneers I’ve read about, looking for anything green to eat. I’ve learned to trust my cravings, and this Shaved Broccoli Salad helped satisfy them.
Awhile back I made some lovely Meringue Nests and had two left over. The went in an airtight container on top of the fridge. In my defense, I can’t really see the top of my fridge and I certainly don’t look up there very often. Once when I had the parents of friends over and learned the Dad was quite tall, I felt obligated to pull up a chair and clean it off for fear he might see all sorts of shame up there! But mostly, other than a bread box that’s sat up there for years, the top of my fridge is ignored.
I’ve been making this Chicken & Fruit Salad for years, originally culled from Cooking Light. It’s just such a gorgeous salad, full of all kinds of great things and it’s all set off by a creamy raspberry dressing. It’s one of my favorite ways to make sure I get some fruit in my diet along with a few greens. On a hot summer day, there’s nothing better.
So a friend of mine called yesterday and asked about Broccoli Salad. Yep. Broccoli Salad. You know it, that “Crazy” salad that’s rather ubiquitous and has been around forever! I first had it in the late 70’s…Fresh broccoli in a sweet tart dressing punctuated by crunchy cashews, chewy raisins and a bit of bacon.
This is a fun little Chicken Salad recipe with a few Greek twists! Full of lean chicken, a lightened dressing and crunchy vegetables, this is a great recipe for early spring through summer. I like to serve these in a Pita, just for fun.
Being an avid reader of cooking magazines, when crème fraîche appeared on my radar, I was wild to use this “new” (to me) ingredient. Of course, it wasn’t available and it took years (decades, even) before I ever found it in a grocery store.
One of my favorite chicken salads (and I have several, just follow the tag chicken salad at the bottom of the page) is this one with dried cherries & pecans. Served over a salad in the winter, it’s festive; the dark cherries pop against the green, and it’s always fantastic in a sandwich.
I believe any food can be made delicious with the right treatment, but I’ve had a hard time warming up to squashes. Too often, I’ve served them because they’re so good for us but my sister-in-law showed me the error of my ways. This little side dish of zucchini and yellow squash is absolutely scrumptious!
Do you remember the cheesy, garlicky deliciousness of that old Hot Artichoke Dip that was so ubiquitous in the 90’s? The one Olive Garden reinvented? How good would those same flavors be over chicken? But maybe just a bit healthier would be great – to ring in the New Year…
There’s a little something about this combination of fruit that does it for me: Honey Dew, Strawberries and Blueberries. Add in a simple, lemony dressing (I’m almost embarrassed to tell you, it’s so easy) of lemon yogurt, finely zested lemon and a few poppy seeds, and there you have it. Familiar, tasty and just a bit sophisticated; this always goes over well.
This simple dressing started out as kind of a made up thing, and has since become a favorite. It doesn’t have any sweetness to it at all, and a quick taste might lead you to be a bit doubtful, but it transforms once it hits a salad. It’s creamy goodness reminds me a bit of what I think Ranch should taste like.
