Sometimes I think a bell pepper can be stuffed with just about anything but I gotta tell you these easy Southwestern Stuffed Peppers are really a standout. They have the fun flavor of tacos but are fresher, lighter, and lower carb, and can I just say, stuffed with mostly pantry ingredients? And cheese. And ground beef, chicken or turkey (or just go vegetarian.) And then, well, more cheese.

Bahn Mi Street Tacos
I don’t know if any of you guys watch Diners Drive-Ins & Dives but I swear it’s becoming an issue at my house. I might need a support group! That’s where I got the idea of Bahn Mi Street Tacos. They’re def a play on American Southern and Mexican with just a touch of Asian tossed in the mix. And just when you might think you’re bored of street tacos…this one is surprising in over the top flavor. A little crazy, even, but it just works!

If there ever was a summery, fun, please everyone kind of salad, Frito Taco Salad has got to be it. This is a salad that’s great for the family on any hot night when you want to temp appetites but don’t want anything too heavy. And it’s a great option if you’re asked to bring something to a party or potluck.

Easy Taco Skillet Dinner

Really, we kind of went nuts over it, and that inspired me to see if I could do the same thing with a Mexican style meal. And so my Easy Taco Skillet Dinner was born.
