If there ever was a summery, fun, please everyone kind of salad, Frito Taco Salad has got to be it. This is a salad that’s great for the family on any hot night when you want to temp appetites but don’t want anything too heavy. And it’s a great option if you’re asked to bring something to a party or potluck.
If you follow me (and if you don’t, I’d love it if you did, signups are to the right) you might remember I made an easy one pan Porcupine Skillet Dinner a few weeks ago. It was surprisingly good. Really, we kind of went nuts over it, and that inspired me to see if I could do the same thing with a Mexican style meal. And so my Easy Taco Skillet Dinner was born.
Unless you grew up around Mexican food, chances are your first introduction to it was probably the ground beef taco. And maybe you make them for your family – they’re fast, easy & everyone seems to love them from kids to kids at heart. I make a few different kinds of ground beef tacos, but these are our fave.
My son, in particular, loves tacos. Hard, soft, he doesn’t care, but he has a particular affinity for tacos made from ground beef, and a love of deep rich flavors and a just little heat. (More heat as he’s gotten older! Can that kid go through the Sriracha now that he’s in his 20’s!) So we started making our Taco Seasoning Homemade, and don’t worry about that little mention of heat and Sriracha; this one is family-friendly.
