I think these Cider & Sausage Stuffed Mushrooms are going to be my new signature app. There’re scrumptious little bites that are going to be a hit as an hors-d’oeuvre at a cocktail party, a starter for a family feast (especially Thanksgiving, Christmas or New Years) or snack on game day.

I love cooking for my folks – my “victims” I call them coz they get the brunt of all my cooking experiments. You’d think at their ages (late 80s early 90s) they’d be jaded about food so I love it when their eyes light up and I hear little happy noises when they eat. It all happened with these Cheddar Bacon Jalapeno Stuffed Mushrooms – and I joined right in.

A fantastic budget item for the buffet, these Stuffed Mushrooms are a bit different from some. A moderate amount of Sherry or Marsala adds a lot of flavor, but they’re dry roasted in the oven. The mushroom flavor intensifies, and these are every bit as good with a plain old button as they are with any of the fancier mushrooms – even better as they’re a bit more tender.
