I know it’s mid-July, but I just had to do Barbecue Chicken Chili in the Instant Pot with some of the Honey Barbecue Pulled Chicken I made the other day. No Instant Pot? No worries. First of all, this is only a very loose interpretation of a Vietnamese Pork Noodle Soup. And no, it’s not Pho and not based on Pho. It’s just a lovely noodle soup, very simple, flavored with a good broth, a dash of fish sauce, some tomatoes & scallions, pork and a few herbs. And a good squeeze of lime. You can never forget the lime! (Like I did in the photos!)
