I haven’t posted a big ol’ salad for a while and for a while I’ve been intrigued by this Cubby’s Beet & Goat Cheese Salad. As stated on Cubby’s website, the salad is a mix of Spring Greens, Roasted Red Beets, Toasted Pistachios, Goat Cheese, Avocado, Orange Slices, Orange Zest, and Orange Balsamic Vinaigrette.

Grilled Plums with Mascarpone & Balsamic Gastrique
This is just a fun little whisper of a dessert, barely sweet and absolutely scrumptious. I don’t know why it took my so long to grill plums and serve them for dessert. I just didn’t “get” it. Now I do. Brushed lightly with honey and seared over high heat for just a minute totally intensified the flavor.

Rhubarb Pistachio Cake
Rhubarb Pistachio Cake. came about because there’s a “perfect storm” of ingredients! A neighbor volunteered some rhubarb, I had just picked up a new carton of yogurt and I knew I had a stash of pistachios in the freezer. Then I happened to open up the April Martha Stewart magazine.

Harvest Wild Rice Salad Citrus Dressing
I recently made the Stuffed Chicken Roast from Better Home & Garden’s December 2015 issue – I couldn’t help but be inspired by their Harvest Wild Rice Salad, served alongside. Gorgeous greens, wild rice and a citrus dressing caught my eye. Toss in a few apples, pears and toasted pecans and sprinkle on a few dried cranberries or cherries and you have a salad!
