While many of us, even here in the States, have at least a passing familiarity with the classic Greek soups enriched with Avgolemono and flavored with lemon, this Greek Meatball Soup takes things in a different direction.

Does anyone remember the cheesy, garlicky deliciousness of that old Hot Artichoke Dip that was so ubiquitous in the ’90s? It was basically artichokes, Parmesan, mayonnaise, and garlic and it was crazy, crazy good. I’m using all those flavors and more in this moist (sorry to say moist- but it is) luscious, creamy Hot Artichoke Dip Chicken. And it’s even crazier gooder than the dip, I swear. This is wanna lick your plate clean good. Hide any leftovers good. Get up in the middle of the night, alone so you don’t have to share, and eat them good!
I’m calling this Almost Alton’s Oven Roasted Broccoli. Just because it’s slightly adapted from the Man himself! I used to make oven-roasted broccoli a lot. Maybe you did, too. So simple, it was hardly a recipe. I’d toss broccoli with a bit of oil, throw it in the oven, and when it was done, it was done.
A series of mishaps around a Chef’s published recipe (some hers, some mine) turned out to be quite the happy accident. The result though is nothing less than a fabulous alchemy of flavors: lightly grilled smokey asparagus, punchy Kalamata olives, shaves of nutty Parmesan and nutty Quinoa form the base of Grilled Asparagus and Quinoa Salad. Really this is a main meal, maybe a brunch meal – the term Salad doesn’t do it justice.
Ok, ok, so maybe these ingredients are not really “top secret”, but they’re going to bump up the flavor of your food and give them that “what’s in it?” note that makes people sit up and take stock.
