I’ve been going nuts over a Midwest Living magazine this summer and you’ll see more recipes inspired from them in the coming days and weeks. This recipe, Orange Apricot Snack Cake, was inspired by their Vanilla Orange Snack Cake and is so much more than it sounds!
I recently made the Stuffed Chicken Roast from Better Home & Garden’s December 2015 issue – I couldn’t help but be inspired by their Harvest Wild Rice Salad, served alongside. Gorgeous greens, wild rice and a citrus dressing caught my eye. Toss in a few apples, pears and toasted pecans and sprinkle on a few dried cranberries or cherries and you have a salad!
You can have a plain old pork chop any day of the week, but why, when in a few minutes more you can pull off this gorgeous little dish and look like a hero? Cumin Dusted Pork Chops with Citrus Glaze are beautifully cooked pork chops served up in a garlicky, citrusy glaze tempered by the earthy cumin. The flavors in that glaze just pop.
I watched an episode of Diner’s Drive-Ins & Dives the other day, Land to Sea and they featured the Black Pelican Oceanfront Cafe in Kittyhawk, North Carolina. I was wowed by the Black Pelican Citrus Rosemary Brined Chicken with a Saute of Vegetables, and I couldn’t get it off my mind. Of course, I looked for the recipe and couldn’t help be bummed that it wasn’t one of the recipes given on the DDD website.
Can you believe we have snow, in Minnesota, in April? Really, our weather has been unpredictable with a few days in the 70’s but mostly just cold and dreary. None of that matters coz I’ve gone to Miami. In my mind, at least with this glorious dish: Cuban Lechon Asado – Cuban Pork Roast. You might know this roast, it’s the one with sour oranges and tons of garlic. Flavor to blow your mind.
