I wasn’t sure whether to call these Old Fashioned Marinated Carrots or Classic Marinated Carrots, but either way they’re delicious, especially in the Summer. They’re cool and refreshing. The Marinade is almost like a tangy Catalina (or “French” dressing, if you’re as old as I am) and they’re the perfect thing for a summer picnic or potluck.
Can you believe we have snow, in Minnesota, in April? Really, our weather has been unpredictable with a few days in the 70’s but mostly just cold and dreary. None of that matters coz I’ve gone to Miami. In my mind, at least with this glorious dish: Cuban Lechon Asado – Cuban Pork Roast. You might know this roast, it’s the one with sour oranges and tons of garlic. Flavor to blow your mind.
Now that summer grilling season is here, think about this simple, healthy recipe. The flavor is outstanding; interesting with the faintest hint of heat and the marinade ensures they are tender and moist, even when using breast meat. I’ve had this on my list of things to make since I saw it in a 2009 Bon Appetit and am so glad I pulled it out and made them.
