I don’t know if there’s anything much better on a hot summer day/evening than no heat up the kitchen option. And when that option is an egg salad sandwich, why not take it next level with this Easy Curried Egg Salad?
Classic Crazy Broccoli Salad
I must be getting old coz I find my memory slipping a bit here and there. (What did I come into this room for is just the beginning!) After I made this Classic Crazy Broccoli Salad, I remembered I already have a lighter no no-Mayo version. So that’s why I’m calling this one “Classic.” (And if you’re interested, another fave brocolli salad: Shaved Broccoli Salad with Apple & Tarragon.)
German Baked Apples Bratapfel
German Baked Apples Bratapfel takes me right back to childhood! I don’t think at the time anyone thought of them as being particularly “German.” They were, like so many recipes that were ubiquitous to the Midwest, just a part of small-town, down-home cooking. Baked apples appeared a lot-at our table for dessert.
Shaved Brussels Sprouts Salad with Apple & Feta
I don’t know if I was happy or horrified by how well the Brussels sprouts I had in the fridge kept! I’ve been checking on them, watching as there were certainly things more desperate to be used at my house. They’ve been in my fridge veggie drawer since the first week we high-risk people were told to stay in so that’s five weeks now, I think! Well, it was high time to get after them and so came about this Shaved Brussels Sprouts Salad with Apple & Feta.
Instant Pot Ropa Vieja
I have kind of a thing for Ropa Vieja and if you’re here, maybe you do, too. I already have a recipe on my site for a long-simmered, Slow Cooker Classic Cuban Ropa Vieja, long a family fave, but these days, I’m all about the Instant Pot…and so I wondered if an Instant Pot Ropa Vieja would be just as good. Verdict: Yup, yup, yup! It’s fabulous.
