I love making greens of any kind in my Instant Pot, but the payoff in time is pretty great with these Classic Instant Pot Southern Collard Greens that usually take so much time and attention and love on the stovetop.
The other day I shared my Instant Pot Brazilian Feijoada. It’s marvelous and easy and really set to be a family favorite. But yanno what else is marvelous and easy? The Brazilian Style Collard Greens I made to go along with that dish. These fresh and tender greens are minutes to make and while I love a traditional style Southern Collard Greens, these are a whole different animal.
Until late in my life, I didn’t really eat greens, and when I’d had them they’d always been Collard greens cooked forever with ham hocks or salt pork – delicious, but something I’ve avoided because of the higher fat and long cooking process.
