My daughter introduced me to one of her fave recipes. It’s Creamy Chicken with Sun Dried Tomatoes. If you do a search, there are many variations on this dish (and of the name, although sometimes you’ll see it called Tuscan Chicken – I think that’s an American affectation); this one is straightforward and easy and only has a handful of ingredients – but it’s no less delish for all of that!
I’ve been on a little Arepa kick lately – I made these Shredded Chicken (Pollo Mechado) Arepas which were fabulous, then went on and revisited the other Arepas on my site, my Chicken Avocado Arepas. So of course, I needed to revise my post on how to make the actual Arepas, which are the little “buns”.
If you’re looking for a quick and easy toss together dinner that tastes like you slaved over it, you might wanna check out this easy and fast One Skillet Chicken Stroganoff. It’s creamy comfort food at it’s best. Tender chunks of chicken, golden brown mushrooms and noodles enveloped in a silky, creamy sauce, it’s a play off of the traditional Beef Stroganoff. And it’s all done in one skillet! Ya gotta love that.
For someone who doesn’t frequent a lot of steakhouses, I seem to be building up quite a little collection of Steakhouse Recipes. (Click on the tag “Steakhouse” at the bottom of this post to see some of them.) Here’s another, a copycat version of Longhorn Steakhouse’s Longhorn Grilled Chicken Strawberry Salad.
