I’ve seen more Baby Bok Choy more often on TV than in real life; seriously, here in the Midwest I’ve never seen it at my regular grocery – but where I have found it is in the Chinese market.

This is one of my fave dishes that leans toward the Asian side, and it’s a play on Thai Cashew Chicken. Actually, until recently, even tho I’ve been making this for decades, I didn’t even realize the distinction between the different types of Cashew Chicken. Live and learn, amirite!
