If you’re looking for something a bit different, and if you’re like me and love anything with Balsamic vinegar, here’s a super easy pot roast for you. You don’t even need to brown this & I love skipping that messy step. 🙂 Do plan ahead for a long marinade, though.
This Red Cabbage and Carrot Slaw practically screams fall – punctuated with sweet-tart chewy dried cranberries, a little extra crunch from the almonds and a zing from the cumin and mint, it really leans more towards Moroccan cuisine than Mexican or Asian or “good ‘ol” American like some of my other slaws. The flavors, though, adapt to a number of cuisines!
I wasn’t just going on and on about the Chickpea in the previous post for the fun of it! 🙂 I am absolutely enamored by this main dish salad. It’s full of fantastic good for you ingredients: Spinach, Chickpeas, Olives and Oven Roasted Cauliflower and is set off beautifully by the home-made dressing.
