My son and I had the best time making these little Pulled Pork Mini Bells the other day. They were each just a perfect scrumptious little bite or two and I thought they might make a great lower carb option for a casual holiday party or a game day. Fair warning: they’re a crowd pleaser and are going to go fast!

It’s been pretty bitter in the Twin Cities, but we’re having a little heatwave and are up to 12 degrees. Which would be great if we didn’t get about 7 inches of snow last night and even better if the high tomorrow wasn’t expected to be -5 with a low of -25 and worse on Wednesday. But that’s exactly the time you want soup! And even better a pretty much pantry soup (if your pantry is anything like mine) and not just any soup. Do yanno what’s a great little thing to have on hand? Just to perk up a little Mexican food or just about anything you’d like a little spicier? Refrigerator Pickled Jalapenos. And not only are the pickled jalapenos great, if you’re into a little heat, but the brine is also fantastic dribbled in or over dishes. The beauty of pickled jalapenos is that if you’re serving a mix of people, maybe some normal along with a few “chili-heads” you can choose a milder heat level. Then the heat lovers can doctor up with the jalapenos and/or a little of the brine.

These are crispy, crunchy homemade potato chips loaded with two kinds of cheese, crispy, frizzled corned beef or other protein of choice, and pickled jalapenos. And sour cream, if you don’t forget to add it like I did before I took pics!
