2 cups of finely chopped, leftover ham (food processor works great for this)
1/4 cup finely diced celery (more or less as desired)
1/4 cup finely minced sweet onion
3 to 4 tablespoons sweet pickle relish, drained
1 teaspoon dry mustard powder
1/2 teaspoon Dijon mustard
1/4 teaspoon clove, or to taste
1/2 cup mayonnaise, or to desired consistency
salt and pepper to taste
Mix all ingredients together. If time allows, refrigerate for an hour and once chilled, adjust the amounts of the spices, relish and mayo to taste. Serve in sandwiches, on toast, with crackers or fill vegetables like tomatoes, cherry tomatoes, mini bell peppers or stuff celery.
