Ingredients

Measure with your heart:

  • 6 to 8 cups Romaine, Iceberg or mix or equivalent amount of packaged
  • 1/4 to 1/2 cup grated carrot
  • 1/4 to 1/2 cup shredded red cabbage
  • 1/4 cup sliced olives (your choice)
  • 1/4 cup (or to taste) pepperoncini
  • 1/2 red onion, very thinly sliced
  • 1 to 2 cups sliced cherry tomatoes
  • 1 to two cups croutons
  • 3/4 to 1 cup grated Parmesan cheese

Instructions

Toss together lettuce, carrot and red cabbage. Just before serving toss in olives, pepperonini, tomatoes, and red onion.

Add dressing and toss. At the table add croutons and Parmesan cheese.
