Kale Salad With Creamy Caesar

Ingredients

Creamy Caesar Dressing:

  • 1 tablespoon capers, smashed
  • 1 teaspoon salt
  • 3/4 cup mayonnaise
  • 1/2 teaspoon garlic powder
  • 1 teaspoon sesame oil
  • 2 tablespoons miso paste
  • 1 tablespoon honey
  • salt and pepper to taste

Kale Salad:

  • I to 2 large heads of kale, stemmed and torn or cut into bite-sized pieces
  • 1 large sweet potato, roasted or baked, cut in bite-sized pieces (see note)
  • 1 to 1 1/2 cups largish croutons, preferably home-made
  • 2 ounces of shaved Parmesan
  • 1/2 cup nuts or pepitas

Instructions

Creamy Caesar Dressing:

Smash the capers along with the salt using the side of a knife until mashed and broken, then grind into a paste. In a small bowl add the mayonnaise, garlic powder, sesame oil, miso paste and honey, and stir. Add in salt and pepper to taste.

Kale Salad:

Mix together kale and dressing to taste; be generous. Refrigerate for at least 30 minutes to soften kale. Just before serving, add the remaining salad ingredients, the sweet potatoes, croutons, shaved Parmesan and pepitas or other nuts and toss again. Serve

Note: To roast or bake sweet potatoes, preheat oven to 400 degrees. Pierce sweet potato in several areas with the tines of a fork or a sharp knife. Bake for about 45 minutes or until it gives easily when pressed. Remove from oven and open immediately so it doesn’t continue to steam.
