Graham Cracker Crust:

  • 1 1/2 cups graham cracker crumbs (about 10 to 12 full sheets of crackers)
  • 3 tablespoons sugar
  • 1/2 cup (1 stick) butter, melted and warm

For the Bars:

  • 1 cup semi-sweet chocolate chips
  • 1 cup miniature marshmallows
  • 9 sheets of graham cracker, roughly broken into 1/2 to 3/4 inch pieces, along with any smaller crumbs that come about with the breaking
  • 2 cups miniature marshmallows
  • 1 cup milk chocolate chips
  • 2 Hershey bars, broken along the lines for “garnishing”

Instructions

Preheat oven to 350 degrees F. Lightly spray a 9 x 13″ pan with cooking spray.

Mix together crust ingredients and press into pan, forming a slight, about 1/3 inch lip around the edges. Layer ingredients in order given, except for the Hershey bars.

Bake for 15 to 20 minutes for gooier bars, just until the chocolate is melty nd the marshmallows slightly browned. Check one of the chips in the middle bottom by putting a toothpick gently in the center. If it comes out with gooey chocolate the bars may be removed from the oven. If crispier bars are desired, after the marshmallows are golden brown (15 to 20 minutes) cover the pan loosely with aluminum foil and bake 10 minutes longer.

When just out of the oven, randomly insert the Hershey pieces at an angle right into the marshmallows. If desired, cover lightly for a few minutes so they melt a bit and collapse onto the marshmallows (they’ll stick better.) Remove foil after a few minutes and let bars cool to the desired temperature.

Note: If over the top decadence is desired, add an additional cup of marshmallows to the two cup measure and an additional cup of milk chocolate chips.
