Fake or “Mock” Mascarpone and Mascarpone Filling

Make a mock marscapone for recipes sweet or savory, or add ingredients to make a delish filling or topping for desserts.

Ingredients

Scale

Mock Mascarpone:

  • 1 eight-ounce block of cream cheese, room temperature
  • 1/4 cup of heavy cream
  • 2 heaping tablespoons sour cream

Mock Mascarpone Filling:

  • 1 recipe of Mock Mascarpone (above) or 8 ounces of Mascarpone
  • 1/4 cup whipping cream, or enough to bring the Mascarpone to the desired consistency for a filling or topping
  • 1/4 cup confectioner’s sugar
  • dash of vanilla

Instructions

Mock Mascarpone:

Whip cream cheese until softened and airy. Add heavy cream, gradually, with mixer on low. Add sour cream. Turn mixer to medium and mix until all ingredients are incorporated.

Mock Mascarpone Filling:

Place ingredients in the mixer and whip to the desired consistency. More cream or more sugar may be added to taste or to make the filling as thick, as fluffy, or as sweet as you’d like.
