Hi guys! Hope all is well in your neck of the woods. Me, I’m still hanging tight and trying to spread comfort through food! I think food has become ever so more important to so many of us during this pandemic. If any of you are psychologists, feel free to comment! And part of that comfort, for me, is trying to make fun, easy things with basic ingredients that will help shake up the dinner routine. Or should that be dinner rut! That’s where the magic of this Roasted Red Pepper Sauce comes in.
The other day I posted a recipe for Waterfall Pork. It was outstanding on its own but one of the things that really took it next level is this simple little dipping sauce, Crying Tiger Sauce (Namchim Chaeo.) It’s fiery hot but tempered by a little sweet and it’s def a brew of flavors.
Kansas City Barbecue Sauce is my ultimate comfort barbecue sauce. Growing up in the Midwest, that’s just what we used, or should I say what my Dad used. It was always glossy, on the sweet side with just a bit of a kick at the end. And it was always used on his grilled chicken.
We’re sitting here in the Twin Cities just waiting to get slammed by a blizzard, and we’re not alone. There’s a whole swath across the upper Midwest. I keep checking the weather but it’s so bright and sunny it’s easy to be in denial. Maybe they’re exaggerating. Maybe we’ll get missed! One thing I do know? We’re having these Oven Roasted Cherry Tomatoes & they’re like a breath of sunshine no matter what the weather and what the time of year.
Oh my gosh is your kitchen looking like mine as the days count down to Christmas? Bags of chocolate chips, flour everywhere, rolling pins and candies and sugar, oh my! And here it is December 20th & I am starting to realize that I just might not accomplish everything I’ve been hoping to before the big day. Mostly because I keep adding things, lol! But I want to back away from the baking (that should be a Meme, shouldn’t it?) and share out this perfect little accompaniment to just about any holiday meal, Spicy Jalapeno Cranberry Sauce.
