Super simple six ingredients - and this ooey, gooey chocolaty bread starts off with a boxed mix!

I came across a super easy recipe and just HAD to make it. Mainly because I’m at the folk’s house right now and they have a kazillion boxes of brownie mix in the pantry. And who doesn’t like Brownies and Banana Bread? And why not combine them?

Now anyone that knows me knows I won’t stoop to make a boxed brownie. Oh, no, not me. They’re easy but I just don’t like them. I even blind folded a friend once and had her taste my brownies and then a boxed one just so she could taste the difference. So maybe I can be just a little “over the top” sometimes. 🙂

But that’s because I have the best ever brownies in the universe on my blog, Hershey’s Ultimate Double Chocolate Brownies.

But faced with too many boxes of brownies languishing away and my Step Ma’s insatiable sweet tooth – I made this Brownie Banana “Bread.” That’s ok, isn’t it? Coz it’s not really a brownie any more and it isn’t cheating on my favorite brownie if this is a “bread!”

This recipe came from 50 Fixes for Boxed Brownies. I hafta tell you I had serious doubts about posting this recipe. I’m very picky about what goes on my blog and adamant that every recipe is absolute deliciousness, usually from scratch, and works flawlessly every time.

But this? I baked it and baked it and baked it – well beyond the promised hour. Finally, I pulled it at an hour and 25 minutes after seeing that the edges had pulled away and were in danger of being overdone. And when I sliced it (warm of course coz who has patience to let things cool?) I was faced with a range of gooey deliciousness inside. Best of all, it was still fudgy after it cooled.

Ultimately, it was somewhat addictive. A little crunchy on the outside and all creamy and gooey and fudgy inside and we kind of fell in love with it. What were really flaws turned out to be what we liked the most. And my ultimate rule on what I post is “Will I make this again?” And that’s a resounding yes. Especially since we still have a lot more boxes of brownies hanging around!

Brownie Banana Bread

  • Servings: varies
  • Difficulty: easy

  • 1 cup mashed bananas (about 2 bananas)
  • 1/3 cup vegetable oil
  • 3 eggs
  • 1 18-oz box brownie mix
  • 1 cup mini chocolate chips (use the mini chips; they melt in)
  • 1 teaspoon all-purpose flour

Preheat the oven to 350º F. Grease a 9×5-inch loaf pan.

In a large bowl, combine the mashed bananas, oil and eggs. Add the brownie mix and stir until just combined.

In a small bowl, toss the chocolate chips in the flour. Fold the chocolate chips into the batter.

Pour the batter into the prepared loaf pan. Bake for 1 to 1 1/2 hours or until a tester inserted in the center comes out clean, but watch the edges and pull before they’re over done.

Let the bread sit in the pan for 15 minutes, then run a sharp knife around the edges and invert to remove the bread. Cool the bread completely on a cooling rack before slicing.

  1. I am SUCH a chocolate freak, and your recipe is right up my alley. There is truly nothing more pleasing than some good old melted chocolate. Gorgeous photography, too! I love how simple this recipe is. I’ve made something similar before, and my pics certainly do not compare. I cannot wait to give this a shot. Thank you for sharing.

  2. Wow Mollie– I never would have thought to put bananas in a brownie mix!! But it sounds super delicious– and I trust your recommendations, of course (and like your parents I do have a brownie mix in the cupboard!!). I’ll have to give this a try! thank thanks! xo

    • It was ooey gooey delish…and maybe now I’m not quite such a snob about the boxed brownies! Especially with mini chocolate chips that melt all in & make them super chocolately!

      • I’ve got it copied on to my “to make list” Mollie. I made (not so good) brownies from scratch all the years we lived in Spain (no mixes!) so maybe that’s why I”m so fond of bowing/cake mixes. But anyway, this bread does look awesome Mollie! hugs!

          • Yeah, what makes that happen– pixie dust? sugar?? I’m going to look up your homemade brownie recipe, next time we need brownies (pretty often around here!). Happy weekend Mollie!   4. Wow I am just as astounded as you are that you used a boxed brownie mix for this! My husband and daughter would be all over this. My hubby regularly makes homemade banana bread and daughter regularly buys and makes her own boxed brownies, why not marry the two?? Great idea. So how long are you at the folk’s house? Or is that a wait and see situation? (Not to be too personal, but it sounds like you are ready to get back to your own house/cooking!)

    • I know, right! You’ll have to get the two of them to team up and make this for you…I’m hoping to head home in the next couple of weeks for awhile. Seems I’m here more than not…It’s weird when you’re used to cooking just what you want whenever you want to go back to cooking for other people – and of course when those people are in their 80’s and 90’s you want to give them what they like.

      We’ve gotten to the point where we have help coming in now, thank goodness, but tonight I got the dinner all ready and in the oven and then I took off and just had some me time. When I came home, I asked how dinner was and the folk’s said they lady made dinner and it was good, but not as good as something I’d make! That was a hoot to hear that.

      • Oh man, I totally GET what you are saying. When my folks ended up staying here for 6 weeks instead of 3 weeks after breaking their backs in a car accident, I was at wit’s end with all the cooking and “catering” I had to do for them. I am so glad you have some help coming in for you. We love our parents, for sure, but we also like our “own” cooking and schedules. Plus you need to use their pots and pans, yikes! That’s so funny that they didn’t realize you cooked that dinner, but I get that too. Hang in there Mollie! xoxo

        • Oh wow! Broke their backs?! Oh my gosh. Hope they’re fully recovered now. And yes, some of their pans are ancient, lol! And I miss all my machinery and equipment. 🙂 Honestly, some things I just cart back and forth with me!!

          • Yes, my mom lost control of the rental car on an icy road (they are from Texas you see) and it’s a miracle they survived. Talk about high-maintenance. They couldn’t even get out of bed by themselves whatsoever for nature’s call, my mom had to call me on my cell at all hours of day and night to help one or the other with something. Anyways, that’s all in the past from over a year ago. Onward and upward, right? Oops sorry to highjack your recipe, lol! 😉

            • n/p, but wow! That was a lot for you. Well glad they’re back on their feet and hopefully doing well but injuries like that – holy crap. How’s your hand doing by the way?

              • Thank you and thanks for asking. My hand is slowly healing, but I have what my PT calls “sticky” fingers. My tendons fuse to the joints and never straighten, no matter how much therapy I do. I’m seeing the orthopedist later this month to see what can be done aside from therapy. My broken pinky finger from almost five years ago healed the same way. Same hand, thank goodness, my non-dominant hand. But I can type just fine, but no piano playing in my future, lol.

    • Would you believe this is only the second time I’ve ever used a mix? The 1st was so my blindfolded friend could see the difference, then she took those home with her and this is the second. And I had to go and admit it publically, lol!!

      I figured that there’s probably a lot of people around with box mix\es that aren’t as snobby about them as me, lol!

    • Thanks Jhuls! When I was little and we traveled into a city, we’d always get to stop at this ice-cream parlour called Baskin Robbin’s. They had 31 different flavors. I would always get a cone with a scoop of banana and a scoop of chocolate. I guess I still love that combo!
