Fake or “Mock” Mascarpone & Mascarpone Filling

I just recently made my Aunt Mary’s Angel Food Cake to take over to a dinner party and wanted to make a Mascarpone Filling. It’s the perfect thing when whipping cream seems a little light and boring and anything else can seem too heavy.

I love Mascarpone: creamy, dreamy with just a bit of a tang, but frankly, it can be hard to find and it can be pricey! And so I decided to make my own. When it wasn’t ready in time, I came up with this lovely concoction. Easy, and simple there are only three ingredients for the Mock Mascarpone. At this point, the Mascarpone can go savory or sweet.

A little extra sugar and whipping cream and a dash of vanilla turns that Mock Mascarpone into a perfect filling for cakes or pastries. And of course, if you have real Mascarpone you can make the filling with it instead.

Bonus – I used a piping bag to fill the little space in my Angel Food cake – and found out by accident that it piped beautifully! I wouldn’t count on it to hold up for very long, but isn’t it pretty? It’s very soft and has just a hair more body than whipped cream.

You can make the filling as thick or as thin as you’d like by adding more or less cream or more or less sugar, but remember both the Mock Mascarpone and the Mascarpone Filling will harden up in the refrigerator.

Mock Mascarpone

  • Servings: varies
  • Difficulty: easy
  • Print

  • 1 eight ounce block of cream cheese, room temperature
  • 1/4 cup of heavy cream
  • 2 heaping tablespoons sour cream

Whip cream cheese until softened and airy. Add heavy cream, gradually, with mixer on low. Add sour cream. Turn mixer to medium and mix until all ingredients are incorporated.

Mock Mascarpone Filling

  • Servings: varies, about 1 1/2 cups
  • Difficulty: easy
  • Print

  • 1 recipe of Mock Mascarpone (above) or 8 ounces of Mascarpone
  • 1/4 cup whipping cream, or enough to bring the Mascarpone to the desired consistency for a filling or topping
  • 1/4 cup confectioner’s sugar
  • dash of vanilla

Place ingredients in mixer and whip to desired consistency. More cream or more sugar may be added to taste or to make the filling as thick or as fluffy or as sweet as you’d like.

  2. Great piping job on the cakes. I’ve never done anything similar. Cake decorating is not something I can do. And the fake mascarpone recipe sounds delicious. I’ll have to give it a try.

    • My piping is pretty rough, lol!! Especially around the bottom – that was NOT what I intended on the base….but that’s the great thing, it all got eaten up!! 🙂

      I’ll be posting the Mascarpone I made soon, too…:)

      • I didn’t even notice the bottoms (I guess that’s why you’ve got diced strawberries there) but the top, especially the one above, are great!

        • I thought it would be pretty with more strawberries and thought I could nestle them in there, but it wasn’t, so I finally decided on one strawberry on each and passed the bowl of slices at the table.

  3. Yum! I love this kind of stuff. I have made similar frostings, but never thought to add a bit of sour cream. I am definitely giving that a try next time! I love your piping too. Everything about these looks and sounds lovely!
