Frozen Lemonade Pie – 4 Ingredient

to I found this little oddity of a recipe, Frozen Lemonade Pie, in my Mom’s recipe box after she passed away. I don’t remember my Mom ever making it but it was credited to my Aunt Mary; my Mom always wrote in the upper corner of every card where the recipe came from. I held that card, looking at the ingredients, puzzled (they are a little strange) and the memories started coming back.

And while still vague, I’m pretty sure I remember them making this Frozen Lemonade Pie when we used to share a cabin way back when we kids were small, at Spirit Lake, or as we called it, and most people from the area do, “The Lakes.”

And oh gosh, the memories! Swimming and sunburns and trampolines & mini-golf. Go carts!! Hot nights on bunk beds with the cousins, the windows open and the sound now and then of a train going by. And this pie (and to digress, my first taste of Banana Pudding.) There was no air conditioning back then, but this would cool us off.

I make a couple of killer lemon desserts, like this special occasion extravaganza, Lemon Curd Mousse Cake, the most amazing Lemon Meringue Pie, and even another frozen lemon dessert, this Frozen Lemon Meringue Cake; I make a few other Lemon Desserts, too – see my menu for Desserts with Fruit.

But nothing I’ve ever made has been as easy as this 4 Ingredient Lemonade Pie. So yesterday with no-shame (well, maybe a little shame because somehow in the back of my head I always think a more complicated from scratch dessert equals more better!) I plunked a grocery store crust in a pan, stirred the filling together and froze this pie.

I just had to see if this tasted as good as I remembered. Verdict: It’s darn good. Really. Surprisingly good. The flavor is intense in that sweet frozen lemonade way and on a hot day it hit the spot! And when you compare the effort to results, this was way off the charts. I am still having a hard time about the Cool Whip in this. What can I say? Happy Memorial Day, folks and be safe. And remember a loved one that served. 🙂 And eat your pie fast, before it melts. 🙂 Don’t stand around like an idiot taking pictures of it, lol!

Making Frozen Lemonade Pie:

Five minutes, folks. That’s right, five to make this pie. Plus time for the ingredients to thaw out (I put them in the fridge the night before) so they could be mixed and then the freeze time. That thawing and freezing time hardly counts as work, though you’ll want to plan ahead.

Just fold gently when it’s time to mix together so the pie will be light, airy and mousse-like. Freeze for at least six hours. Make it in the morning and it will be ready for after a swim when everyone comes out of the lake just starving or for a dessert. Or make it the night before. Just make it. 🙂

I sprinkled some graham cracker crumbs around the edge of the pie before I froze it and dropped some Candied Lemon Peel on the pie after I removed it from the freezer. Don’t freeze that candied lemon on the pie – it does not end well. It isn’t attractive at all as I found out the hard way! Hey, I had to do something to complicate this up – I’m a food blogger, after all!!

Saving Money on Frozen Lemonade Pie:

There’s no sense in ever paying full price for any frozen concentrate. Just pick it up on sale and chuck it in the freezer where it keeps practically forever. The same with condensed milk and cool whip – stock up during the Thanksgiving, Christmas and Easter sales. I don’t usually buy graham cracker crusts, but it worked out perfectly with this dessert – they really aren’t on my radar as far as scoring on the cheap but I have seen them on sale every now and then throughout the summer.

Frozen Lemonade Pie

  • Servings: 8
  • Difficulty: easy
  • Print

  • 1 8 inch graham cracker pie crust
  • 1 8 ounce container Cool Whip, thawed
  • 1 6 ounce container of Lemonade, thawed
  • 1 can condensed milk

Place cool-whip in a large bowl. Stir the lemonade and condensed milk together and fold into the cool whip. Pour into crust and freeze for at least 6 hours.

Serve frozen.

      Oh my gosh, thank you so much!! Photography has/is a huge struggle for me, and as I remake a lot of my old recipes I try to take new pics! This lemonade Pie is on my list if I every have freezer room again!! 🙂
