    Please help me sold a problem. I made a lovely cheese sauce for a casserole dish recently and it became watery during the baking….tasted good but what a disappointment! Did the oven temperature cause this? My thanks for your help!!

    • Hi Judy! Usually a cheese sauce won’t “break” during a baking because generally casseroles are baked between 325 and 375, or the whole casserole can be placed under the broiler as is often done. So if the sauce breaks from heat, you’ll have watery cheese sauce with little globules of cheesy protein substance -you generally “know” when that happens – and I don’t really see that happen in the oven, usually.

      My guess is that something in the casserole was giving off too much water – usually that’s the vegetables – broccoli is notorious for giving out water, or sometimes if the casserole is pasta based, maybe the pasta wasn’t drained well enough.

      Or maybe the sauce itself wasn’t thick enough so when it was at the higher heat it was just more liquidy.

        Not one of yours and I suspect it was the asparagus in the recipe though I really drained it…..pasta as well. Thanks so very much! The recipe is worth making again though I’ll have to think about how to get more water out of the asparagus without overcooking it as it cooks even more in the oven. Since everything is cooked and hot, I wonder about just layering it, as told in the recipe, and then running it under the broiler to brown it? I appreciate your help!!

    • Thanks, Antonia! I can’t wait to see all the entries and see if we have a lot of special Mexican recipes for Cinco de Mayo and brunch recipes for Mother’s day! And I’m sure all the crafters will be very busy, too!
