The Best Bailey’s Frosting – That really tastes like Bailey’s is in it.

I had so much fun experimenting with Bailey’s frosting – I think I was covered with frosting by the time I was done. I seriously wanted a Bailey’s frosting that actually tasted of Bailey’s and here it is…and it has a generous full cup of Bailey’s!

I also wanted enough of this to frost a bunch of cupcakes – because on a day like St. Patrick’s day, you’re going to need the fortification – after all, you’re going to have to get through that parade and face crowds, weather and walking!

This makes enough to generously frost 24 or so cupcakes and it’s light and fluffy. Don’t use it for the center of a multi-layer cake as a filling; it’s much too airy for that. It’s gorgeous, light and mousse-like. You’ll love it if you love Bailey’s and chocolate! 🙂

If you’d like, this would be a perfect recipe to make from my home-made Bailey’s Irish Cream. Be forewarned, it’s not your old-fashioned Bailey’s recipe made from condensed milk – it’s my “Reverse Engineered” Bailey’s and it is delicious!

When I used Bailey’s Frosting for my St. Patrick’s day cupcakes, I dipped the tops of my some of my cupcakes in the chocolate ganache while the chocolate was still warm, then set them aside. I cooled the chocolate ganache, then whipped it into a buttercream and frosted the cupcakes. That dipping is an optional step, but hey, why not?? lol!

I found as I was making this that buttercream isn’t as exact in measurements as I always thought – there’s plenty of room for dipping if you want and it works fine if you don’t. You know what’s coming next, right? That cupcake recipe! 🙂 🙂 🙂 And it’s fabulous!!

Bailey's Chocolate Frosting

  • Servings: ?
  • Difficulty: easy

  • 16 ounces chocolate in small pieces (I used half milk & half semi-sweet chocolate)
  • 1 cup Bailey’s Irish Cream
  • 1/3 cup light corn syrup
  • 1/2 cup sour cream
  • 1 stick butter, room temperature

Place chocolate in a heatproof bowl. Heat Bailey’s to boiling point in the microwave or stovetop. Pour over chocolate, add the corn syrup and leave to stand for three minutes. Gently stir together. Add sour cream and stir in.

Refrigerate until cold, stirring every 15 minutes. If you use a light metal bowl, this should take about 45 minutes.

When the chocolate mixture is thickened and cold, place in a mixer bowl and whip, using a spatula to scrape down sides, until mixture is lightened in color, about two minutes.

Add butter a tablespoon at a time, whipping well after each addition and scraping the sides and bottom of bowl as necessary.

    These look fabulous, but I have a question: If you use some of the ganache for dipping the tops of the cupcakes, how do you know how much butter to use when whipping the remaining ganache for the whipped frosting?

    • I had wondered if I should mention that! The ganache, when warm, goes on very thinly and I’ve found that the amount of butter in the buttercream isn’t really so particular. It has seemed to work out just fine either with dipping or without.

  2. Wait a minute!!! You dipped them in ganache and then frosted them?!!! You are my hero! Frosting is my absolute weakness and I love trying new flavors. This is definitely getting pinned and made sometime when I have plenty adults around to help me eat the cupcakes…. otherwise I might end up on the floor trying to eat them all myself!

    • lol, Carlee, and thanks! I did think that was rather inspired of me – haha! Yep, a party would be great!! You could just use cream instead of the Bailey’s, too. Or maybe even that Bailey’s coffee creamer…?

    • Thanks Julianna! I knew it could be done but i knew it was going to take more than a tablespoon or so that I see in most recipes…that’s why I went with the chocolate ganache base – and since Bailey’s is thinner than cream I added the sour cream. 🙂 Anyway i love it – and they were so good the first day but the few we had left were even better the next, lol!
