Brussels Sprouts are always super popular around Thanksgiving, but a salad like Shaved Brussels Sprouts Salad with Feta, Berries & Almonds is gonna take those sprouts and make them super appealing any time of the year. A salad like this will span the seasons.

I know these days you can buy all kinds of salad kits made with Brussels Sprouts and all kinds of goodies already included (and probably a dressing, too) and they’re always pretty good. The thing is, you can, with very little effort make your own and there are so many reasons to do so.

About Shaved Brussels Sprouts Salad with Feta, Berries & Almonds:

When you customize your salad with the ingredients you love, you know you’re going to love everything about it! This salad (and isn’t it nice to see a lighter one without bacon, tho I suppose you could add it if you want) is full of dried, mixed berries which adds just a little sweetness, chewiness and such great flavor, a little crispy red onion, Feta cheese for the tanginess and crunchy slivered or sliced almonds. Oh, and a fresh, bright Sherry Vinaigrette that’s to die for!

This salad makes a lovely side or a main dish salad as a vegetarian option. The protein comes from a few nuts, a little Feta and the Brussels. Yes, many vegetables do have protein, although smaller amounts, but combined altogether it adds up. Seven grams of protein from a salad? That’s nothing to sneeze about. If you want to eat this as a main dish salad, you’ll want to serve the larger portions & then the protein would be a bit more per serving.

There are a couple of other reasons I like making my salads like this one. I know it’s going to be as fresh as possible, there aren’t going to be any safety concerns and I can control every ingredient that goes into it. I just really think the ingredients are important, especially with the dressing. Read some of the concerns I have with premade salads at Nest & Glow.

The Sherry Vinaigrette works so well with this salad & is kind of a “house” favorite! It’s a fabulous complement to the Brussels (and great with salads made with sturdy greens like kale), takes only minutes to whip together, keeps forever and just keeps getting better and better with time. You won’t need the whole recipe for this salad but you won’t regret having a little extra in the fridge.

Making Shaved Brussels Sprouts Salad with Feta, Berries & Almonds:

If you have a food processor, this salad is nothing to make, just pop those Brussels in and you’re done. Do trim off any hard ends from the stem though first. I’ve made this plenty of times by hand. I find it easier to cut each sprout in half, length-wise and lay them down flat side down and then slice. It takes so much less time than you’d think.

This salad, and many Brussels Sprouts Salads, is best after it sits for a while, and I think it’s even better the next day after the dressing works on the Brussels and softens them just a bit. I add the shaved almonds and Feta, though, right before serving.

Saving Money on Shaved Brussels Sprouts Salad with Feta, Berries & Almonds:

If you have one nearby, pick up your Brussels at Aldi or Costco; they’re prices are usually lower than any sale prices at the store. If not keep your eye out for them on sale, especially near any of the Winter Holidays; see my post on Winter Holidays How to Beat the Grocer for items to look for and stock up on during the Winter Holidays. Brussels are never the cheapest of veggies, so look for ones that are freshest. If you do have wilted or yellowed leaves, don’t toss the sprouts; just peel them off to reveal the fresher leaves below, take a cut at the very top of the Brussels sprout if you need to.

You might want to take a look at my post, What to Know About Feta Cheese. It has all kinds of information for shopping for and storing any remaining Feta so it stays usable for weeks. Hint: Don’t buy the crumbles, even if they look cheaper. The quality isn’t as good and they usually run at least twice the price of the block. Ya gotta compare the per pound pricing.

Get in the habit of stocking up on nuts and dried fruit in the fall, around the Winter Holidays. There will be sales galore. Watch at the grocery, Aldi or your buyer’s club and be sure to check alternative stores. Farm & Tractor Supply Stores often have marvelous prices and maybe even your hardware store. Repackage any in flimsy wrappings and keep nuts in the freezer.

Ingredients

Scale
  • 1 pound Brussels Sprouts (12-14), thinly sliced
  • 1/3 cup mixed dried berries
  • 1/2 cup shaved almonds
  • 1/2 cup Feta, crumbled
  • 1/2 red onion, thinly sliced
  • salt and pepper if desired
  • 1/2 recipe of Sherry Vinaigrette, or to taste

Instructions

Mix all ingredients together except for Feta cheese & almonds. Best if it sits for at least an hour, even better the next day. Add Feta Chese& almonds right before serving.
