I love making (and eating) these fun, easy and fast microwave scrambles I call Egg in a Mug Microwave Omelets. They’re just a perfect little omelet for one done in the microwave in a mug in just a couple of minutes.

All you do is microwave any veggies, add your eggs and microwave for a minute, stir and then add any meat or cheese. Pop it back in the microwave for another 30 seconds or so to finish it off. Tada! Egg in a Mug Microwave Omelets at the ready! And best of all? No messy pan!

Egg in a Mug is a perfect thing to toss together for a quick breakfast & you can probably make one in your breakroom microwave at work, they’re so fast. Or maybe you need a high protein snack after a workout or a little midnight snack? Egg in a Mug will have you covered.

Or maybe you have a family with varied diets and or tastes – you (or they) can toss together your individual microwave omelets, and they’re easily customized. You might want to prepare a little plate of ingredients the night before. Or let’s say you are at a cabin or ski lodge and there are multiple people getting up and out at different times. Why not put a spread out of varied veggies and meats and let everyone make their own Egg in a Mug when they’re ready? Leftovers can be tossed in a salad that evening.

It was my brother that first gave me this idea, and I ran with it. I wish I would have made Egg in a Mug for the kids when they were young – they don’t take much more time than making cereal and would have been so much better for them. Even me, so NOT a morning person, could have handled making Egg in a Mug!

Making Egg in a Mug Microwave Omelets:

While everyone I know knows I’m not a morning person, I don’t know if anyone knows how much I underutilize my microwave. I recently learned how to make the most perfect asparagus in the microwave as well as poached eggs, and now, these! And I’m hooked!

Microwaves vary in strength, mugs will be different sizes and thicknesses and even the size of the egg or what you’re putting in your Egg in a Mug are all variables that can affect the cooking time. The first time you make your Egg in a Mug, you’re going to want to watch it very closely and be prepared to experiment a bit. Timing might vary.

Just so you know, I made all the Egg in a Mugs in a larger mug and just transferred them for serving to the smaller mugs. It’s easier to stir in a big mug and the mixture expands enough that it needs a big mug to cook in or it might drip and make a mess. Bonus for cooking in one big mug? Only one mug has to be cleaned of cooked egg. Not that it was that difficult to clean, but if you’ve cooked eggs, I’m sure you know what I mean – you have to use the scrubby part of the sponge and it gets all gooky…plus, I’m lazy and always looking for the easy way out! If I can pass a good tip on to you, that makes my day!

What to put in your Egg in a Mug Microwave Omelets?

Wow, was this true confession day, or what? Now you all know I’m not a morning person, lazy, and never really learned how to use the microwave, lol!

These little mugs can be adapted to almost any flavor that would be great with scrambled eggs or omelets. Classic flavors like the Denver Omelette, Spanish Omelet, Quiche Lorraine, etc., are always great, but there are so many wonderful combinations.

Maybe you’d like to think outside the box? Maybe you’d like Pizza Egg in a Mug Microwave Omelets or  Mexican Egg in a Mug Microwave Omelets. I keep thinking Egg Foo Yung, but haven’t gotten around to it. You’re only limited by your imagination – well, that and what’s in your fridge…

Some Suggestions for Egg in a Mug Microwave Omelets:

Meats: Anything that’s cooked smoked, preserved or cured. Bacon, sausage, ham, pepperoni, salami, lunch meats, chorizo, leftover chicken, pork or steak.

Cheese: It’s nice to have at least one melty cheese and maybe a hard one, too. Think basic cheeses but also Feta, Goat cheese, Ricotta, Cottage or even American. Hey, it’s your omelet!

Vegetables: A few finely diced onions work well, but make sure to finely dice or they may lend a raw taste. Think veggies that need little to no cooking like bell peppers, mushrooms, tomatoes, zucchini. A small dice is key so it cooks quickly in the microwave. If already cooked, like leftover veggies, add in after the first minute of cooking.

Add-ins: Don’t forget other fun add-ins like olives, salsas, pizza or spaghetti sauce, hot sauce, sriracha, etc.

Egg in a Mug Microwave Omelets

Ingredients

Scale
  • 2 eggs
  • 1 tablespoon milk
  • 1 ounce cheese
  • 1 ounce meat of your choice
  • vegetables of choice

Instructions

Spray the inside of a microwave-safe mug with cooking spray (or use a bit of butter or oil.)

If using vegetables, place desired amount in the mug, microwave for one minute.

Drop in the eggs and milk, do not stir. Microwave for one minute – until barely set around the edges. This may vary a bit depending on the strength of your microwave so watch closely the first time. Remove and add any meat or cheese. Stir everything together.

Place back in microwave and cook for an additional 30 seconds or so. Again, this may vary according to microwave strength and amounts used. Remove from microwave before it is quite “set” as it will continue to cook in the hot mug.

Eat from the mug or turn out to another mug or plate.

    • Thanks, I can say this is one of my go to’s for breakfast, especially now that the thinking is that the cholesterol in eggs isn’t as bad for one as once feared!

    • Thanks so much! I started out with healthy ones – spinach, one egg, one egg white at my brother’s suggestion when I had an illness and couldn’t really cook much.

      Somehow, it morphed from there and the madness took over!

      I forgot to mention, too, this would be a great thing for those that have to get to work and don’t have time for breakfast if they have a fridge and microwave in the break room. Just keep the eggs there and bring a little baggie of “mix-ins” every day or so. Avoid all the donuts and pastries that are so often around.

      • It’s great! We are always rushing out the door in the morning trying to get my over-slept teenager to school. He ends up with a smoothie or protein shake in hand for the drive. He’s crazy about eggs so I’ll introduce your idea to him and I am sure he’ll be making eggs too. Now that I think about it what a great thing for a teenager to know! Cooking eggs in a mug.

        • Those teenagers (and young men) need a LOT of sleep, and a LOT of protein. I haven’t tried it with three eggs, but I’m sure it would be no problem with a little time adjustment. I posted this because my son was here over the weekend with his girlfriend and I showed them how to do this. I knew they could pull out their phones, then, and look it up on my blog if they had any questions about it…

          We do a lot of green smoothies here, too. Sometimes I put everything in the blender jar the night before and put it in the fridge. Other times I double it up and put one away in the fridge for the next day, especially if I know it’s going to be hectic. I’ve heard that it’s best to drink the green ones at least five minutes after being made and up to 20 minutes, but I figure that even one a day old has to be better than nothing!

          • I have heard the same thing about drinking the smoothies right away, and also agree with you about even if it’s a day old it’s better than nothing or a bowl of sugary cereal or something of the sort!
